It’s getting to that time of year where we are changing from overnight oats back to porridge. I was working away with a great team and in the mornings one of the options for their brekkie was porridge. Not just any porridge, this is next level! One of the squad had a bowl and the rest of the team were cuing up! You’ve got to add texture and flavour to the humble oats that will give you the energy to smash a morning!
Ingredients
Makes 1 bowl
30g rolled oats
250ml or your preferred milk or milk alterative
½ tsp cinnamon
Pinch of salt
1 Tbsp peanut butter or your preferred nut butter (I’m a crunchy Peanut butter addict)
Toasted coconut flakes
Cacao Nibs
Your favourite in season fruit
Honey or maple
- Put your milk or milk alternative in a non-stick saucepan, add your oats to the saucepan and cook on a medium heat for 4-6 mins, making sure you give it a good stir.
- Stir in the cinnamon, pinch of salt, add some honey or maple to the sweetness you like.
- Take the porridge off the heat and put in a bowl, add your fruit, dollop of peanut butter, toasted coconut flakes, cacao nibs and if you wanted a little more protein add some Greek yogurt or yogurt alterative on top and you have a bowl of absolute yumminess that will set you up for the day!
